Pandan layer cake is a wonderful dessert. It is also my super favourite cake. Pandan leaves emit a super fragrant smell when used with thick coconut milk. It enhances the nice taste and smell of coconut and turns food a light green colour. My customer comments that they had try many outside pandan layer cakes before but never taste so good as mine. Wow ! sooo happy with their compliment....
Actually pandan leaf is quite widely used in Asia. The entire plant is used as a diuretic, the roots have anti-diabetic properties and the leaves are used for treating skin diseases. Recently my father told me that he used the pandan leaves to treat his gout, seem it work !!!
