Steam Glutinous Rice With Chinese Sausage, Shredded Pork, Sliced Green Onions,Chilies, Mushrooms And Dried Shrimps~ ( 蒸糯米饭 )





Last Friday, i tried cooking glutinous rice for the very first time in my life. Steam Glutinous Rice or Lo Mai Fun pronounced in Cantonese speaking regions-----is a very popular dish among the Chinese and it is tasty and yummy.
This dish reminds me of my grandmother. When i was young, my grandma liked to cook this Lo Mai Fun for us. I still remember she told me that, due to cost saving, each time she will cook 2kg of glutinous rice in order to feed 8 "big mouth",means 5 sibling of us + both parents and herself. wow!!! such a big eater loll......
I personally really enjoy Lo Mai Fun, it's similar to the Dim Sum " Lo Mai Kai "糯米鸡 ( steam savoury glutinous rice with chicken------A classic dim sum dish served during yam char hour. The different between these 2 dishes were, Lo Mai Fun steamed in large trays and the Lo Mai Kai made in individual bowls.

Recipe taken from i heart my bakes
Ingredients :
250 gm glutinous rice, soaked for 3 hours or longer
2 Chinese sausages, chopped
40 gm dried shrimps, chopped
3 dried Chinese mushrooms, soaked until soft and cut into cubes or slices
250 ml water

1/2 tsp salt, adjust accordingly
1 1/2 tbsp oyster sauce
1/2 tsp white pepper
2 tsp sugar
1 tsp chicken stock powder
2 tbsp oil
4 cloves garlic, minced finely

For garnishing
1 fried egg,  cut into thin shreds
1 spring onion, cut thinly
1/2 red chili

Method :
1. In a non stick wok, heat up the oil.
2. Fry the garlic until they turn yellow.
3. Add in dried shrimps and fry until  fragrant.
4. Add in Chinese sausages and Chinese mushrooms.
5. Fry for 2 minutes until they are fragrant.
6. Add in the soaked glutinous rice and fry with the other ingredients until the rice absorbs all the flavour.
7. Add in half of the water and continue frying for 2 minutes.
8. Add in the seasoning and adjust the taste accordingly.
9. Add in the remaining water and turn off the heat.
10. Place the rice mixture into a steaming tray and steam for 20 minutes or longer. ( steaming time depends on which type of glutinous rice you are using and how long you soak them, adjust accordingly.
11. Dish up and garnish with egg shreds, spring onion and red chili.
