Braised Duck With Beancurd Stick ~ 腐竹鸭








Braised duck is one of my hubby's favourite dish. My mother in-law used to cook this dish during CNY Eve ( 初夕). Unfortunately i don't have any chance to try on this delicious Cantonese style cuisine as my mother in-law fall sick after we newly married. Since then, maid will handle all the cooking...
My hubby really missed it ! Upon his request i try my best to cook him " fu chook ngap " according to my mother in-law's recipe.
Actually this dish is quite easy as long you able to find a quality "nam yue" ( 南乳) fermented beancurd. Perhaps this little ingredient will make your " fu chook ngap" taste fantastic and super duper good.. According to my hubby , my mother in-law will only used " nam yue " from a hawker stall at Riffle Range, Air Itam.
Luckily my culinary skill able to meet the standard same as my mother in-law. hehe...Every one enjoyed the "fu chook ngap" very much.

Recently i was addicted to chiffon cake....Especially this wonderful fragrant pandan chiffon ( using cooked dough method ). It is super light and cottony soft. We loved it very much. Muak ! muak ! muak.....

First impression at this mango yogurt chiffon cake at Wen's Delight site, my daughter immediately bookmarked it and requesting me to bake for her.
So happy that the cake came out pretty nice!! i really loved it ----soft, moist and further more it is not very sweet.........^^

一道菜肴~百般的思念。。。。客家酿豆腐 (Hakka Yong Tau Fu )








这道美味菜肴让我想起母亲,更勾起对她的思念与回忆。母亲爱好美食,“食得是福”是她的信念。记忆中,与母亲一块出门用餐她总是带着跃跃欲试的心态,更会点上整桌子的美食让大家品尝。她深信通过品味别人的食物,可让自己的厨艺更上一层楼。。。。。
母亲的家常菜让人回味无穷,而她拿手的客家扣肉,春卷,猪脚醋,咖喱鸡,酸辣蟹以及这一道客家酿豆腐更让人竖起拇子赞好!
母亲生性慷慨好客,准备美食毫不吝啬。每逢过年过节,遇到亲戚朋友到访,都会奉上整大锅的各种美味佳肴让大家吃个痛快。
所谓美食可以牵窂人心,就拿我那群表兄弟姐妹们,从小吃母亲的美食长大因此对于母亲又敬又爱。猶记得在母亲丧礼守户夜裡,大伙都不经意的想起她的美味菜肴,更难以忘怀她的热情与厚爱。。。。
如今母亲已不在身边,对母亲的思念却有如春草一般,岁岁如年。最遗憾不过的是莫过于不能陪伴在她身边与她一块儿抗癌,只因太过挚着于工作岗位以及太过顾及年幼的孩儿。
幸好,我有一位非常伟大的父亲,一位非常孝顺的姐姐和一位非常孝顺的小弟总是不离不弃的默默守候在她身边至到她离去。。。。。
说来真是惭愧万分,心里既茅盾又无奈。身为一位医护人员,当自己的母亲最需要关怀,看顾及渴望得到心理平衡点时,这一位护士女儿却无法随时伸出援手扶她一把及陪伴在她左右!!!
这一份所谓神圣的工作,令我逐渐对它产生疑惑而且也厌倦了那勾心斗角的病态,甚至于麻木及切底失去信心。。。。。
五月~一个充满温馨的月份,康乃馨飘香的季节,能够和至爱的母亲共同欢庆节日,身为儿女的你们最幸福不过了。。。。
没了母亲的儿女们,虽然是别有一番滋味在心头,也只好凭借美好的回忆来重温那深深的思念了。。。。。。。。。。。。。

材料(A )
花肉  350 gm (剁幼碎)
虾仁   150 gm (剁幼碎)
咸鱼     35 gm   (剁碎)
小葱头 10-15 粒 (剁碎)
青葱1根 (剁碎)

材料(B)
红辣椒 7 条
苦瓜      1 条
茄子(矮瓜)1 条
豆干      3 块

调味
五香粉 1 茶匙
胡椒粉 1 茶匙
糖          1 茶匙
盐少许


做法
1 把所有材料A和调味料捞拌均匀
2 然后酿人已事先准备好的B材料
3 下锅油炸至肉绞呈金黄色即可

酱料的材料
蒜米1大匙
小葱头3-4粒(切丝)
蚝油1大匙
酱油2 大匙
胡椒粉少许
清水500 ml

1 爆香蒜米和小葱头,加入其余调味料及清水,待滚。
2 先加入炸好的苦瓜,用小火焖至熟软,然后才加入其余的酿料,煮大约4-5分钟即可。



Steamed Hakka Glutinous Rice Flur Pancakes ( Xi Pan ) ~ 喜粄





"Xi Pan" in Hakka called Hee Pan, a very traditional and old fashion type of kuih. It is one of the Pusing Delight. I get to know this kuih when visiting my aunt in Pusing Panchor when small time.
I liked the pinkish and greenish colour of the kuih itself. Texture wise ~ soft and a bit chewy steamed rice bun. Best to serve while still fresh otherwise it will turn into a bit harden and dried the next day!
My hubby not appreciated this kind of kuih as he claimed inside no "inti ". LOL.......
